Whiskey Butter Steak with Truffle Fries.

Ingredients

Whiskey Butter:

2 sticks unsalted butter, softened
2 shallots minced, soaked in 1 shot of Jack Daniels or other whiskey or bourbon
3 teaspoons minced parsley
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard
3 teaspoons Jack Daniels or other whiskey
1/2 teaspoon sea salt
White pepper to taste

Steaks

4 cowboy steaks, bone-in rib eye steaks, or other favorite steak, about 1-inch thick
1 teaspoon kosher salt
1/4 teaspoon whole black peppercorns, coarsely ground
Olive oil
Chopped parsley, optional

Fries

4 large potatoes, peeled
Oil for frying
3/4 teaspoon salt
1 tablespoon plus 1 teaspoon truffle oil

Preparation: 

Make Whiskey Butter:
Make Butter at least 3 hours in advance. Combine butter, shallots soaked in Jack Daniels (or other bourbon or whiskey), parsley, Worcestershire, mustard, whiskey, salt, and pepper. Mix well. On a piece of plastic wrap, drop butter in spoonfuls to form a log. Roll butter in plastic wrap and smooth out to form a round log. Refrigerate until hard and easy to slice into round, coin-shaped pieces.

Prepare Steaks:
Allow meat to come to room temperature about 15 minutes before grilling.

Just before grilling, brush both sides of the steaks with the oil and season with salt and pepper.

Place steaks directly over medium-high heat for about 1 to 2 minutes, just long enough to get good grill marks. Turn steaks and sear the other side. Move steaks to indirect heat and continue cooking for about 7 more minutes for medium rare.

Remove steaks from the grill, top with a pat of the whiskey butter and allow to rest at least 5 minutes but no longer than 10 before serving.

Spread the melted butter all over the tops of the steaks and top each with a fresh slice of the whiskey butter and parsley, if desired.

***2 minutes on each side +additional 30 seconds on each side for RARE

3 minutes each side MEDIUM RARE

5 minutes each side MEDIUM

9 minutes each side WELL DONE

Fries

Cut the potatoes lengthwise into thin strips, about 1/3-inch in width. Soak the potatoes in ice-cold water for 1 hour, drain, and pat completely dry. Heat the oil in a deep fryer or deep skillet to 325F and fry the potatoes, in batches, for 2 minutes. Drain the fries on fresh kitchen towels and heat the oil to 375F. Fry the potatoes for a second time, in batches, for 1 1/2 minutes. Drain the fries on baking sheets lined with fresh kitchen towels and divide them between servings plates. Sprinkle the salt them and then drizzle truffle oil over them.

***Substitute Duck Fat for truffle oil for a richer taste.

Beer Infused Pizza

Ingredients 

1 tablespoon olive oil

1/2 pound pepperoni sausage, diced

1 pound bacon, diced 

1 (4 ounce) can sliced mushrooms, drained

1 onion, chopped

1 green bell pepper, chopped

1 (28 ounce) can tomato sauce

1 cup beer ( I used Blvd. Wheat, a local Kansas City beer. Any Sam Adams or full flavor beer works great.)

1 clove garlic, minced

1 teaspoon dried oregano

1/2 teaspoon dried thyme

1/2 teaspoon salt

1 (8 ounce) package shredded mozzarella cheese

Preparation 

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Heat the oil in a skillet over medium heat, and saute the pepperoni and bacon until evenly browned. Mix in the mushrooms, onion, and green pepper. Cook and stir about 5 minutes, until tender.
  3. In a medium saucepan over medium heat, mix the ingredients from the skillet with the tomato sauce and beer. Season with garlic, oregano, thyme, and salt. Allow the mixture to simmer for about 15 minutes, until slightly thickened. Spread over the 2 pizza crusts, and top with cheese.
  4. Bake 20 to 25 minutes in the preheated oven, until the cheese is melted and the crust is golden brown.

Pizza Crust Recipe (Makes 2 pizzas)

1 (.25 ounce) package active dry yeast

1 teaspoon white sugar

1 cup warm water (110 degrees F/45 degrees C)

2 1/2 cups bread flour

2 tablespoons olive oil

1 teaspoon salt

Pizza Crust Instructions:

  1. In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  2. Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.

COCA COLA CHICKEN WINGS

Ingredients

2 pounds chicken wings, wings and drummettes separated

1/4 cup soy sauce

2 tablespoons Sherry vinegar

3/4 cup Coca-Cola – I used the kind with real sugar

2 green onions, chopped

Toasted sesame seeds

2 tablespoons vegetable oil

Directions

  1. Marinate the chicken wings in half the soy sauce for 15 minutes at room temperature, turning to coat both sides of wings.
  2. In a small bowl, combine remaining soy sauce, Coca Cola, and vinegar.
  3. Heat oil in a large skillet.
  4. Sear chicken wings until browned – about 3 minutes on each side.
  5. Add soy-coke mixture and bring to a simmer.
  6. Simmer over very low heat, uncovered, until the sauce is reduced, about 25 minutes.

Serve chicken topped with sesame seeds and chopped green onion.
